Explore the bounty of nature's garden with a box filled with delicious wild, edible food. Pickled fiddleheads, salted wild leek leaves, dandelion jam, spruce tip syrup, wild greens powder, crabapple butter....these are a few examples of the items you might find in your box.
Industrial agriculture has led to widespread depletion of nutrients in our soil. The result of this is that the nutrients in our cultivated vegetables have declined significantly since at least the 1940's. Carrots have 99% less vitamin A today, than in 1940, and apples have 80% less vitamin C. A recent analysis of all vegetables in the UK revealed losses of 76% of copper, 46% of calcium, 27% of iron, 24% of magnesium and 16% of potassium. In a recent article, Australian soil scientist Christine Jones reported that it is possible to buy an orange today that contains zero vitamin C.
While research on wild food is still relatively new, the studies that are being done are revealing some fascinating information. Across the board, wild food has more vitamins, minerals, essential fatty acids and beneficial phytonutrients than grocery store produce. According to forager and taxonomist Arthur Haines, "wild plants are more nutrient-dense than agricultural species. There are often manifest differences in the micronutrients, phytochemistry, essential fatty acids, and fiber provided by non-cultivated species."
In the years since reading Michael Pollan's book In Defense of Food: An Eater's Manifesto, I have taken his advice to heart, but have added on to it: "Eat food, not too much, mostly plants, many of them wild."
